zucchini
pancake batter
margarine

1. Make up pancake batter from your favorite mix or recipe.

2. Slice the zucchini in 1/4 inch thick pieces.

3. Melt margarine in frying pan.

4. Dip the zucchini in the pancake batter and place in frying pan with melted margarine.

5. Cook until tender and golden brown. Remove from pan and place on paper towel to drain.

6. Serve hot.

NOTE: Batter doesn’t have to be pancake batter. It can be Tempura like th Japanese use or any other batter you care to try. You do need to use margarine and not butter. Butter burns and ruins the zucchini.
