  Comments: Any quick bread type cake can be baked in canning jars. The cakes stay fresh and moist for several months. Use jars that are wide mouth. They must be straight on the inside with no irregularities. Always use NEW lids. The jars must be greased well. Do not use PAM or any such cooking spray. Use shortening or lard and use a pastry brush. There will be a little condensation on the lids and some in the jars so when you seal them it''s trapped inside. Don''t worry about getting the water off of the lids before placing them onto the jars, the

Ingredients
2/3 c shortening
1 1/2 tsp. salt
2 2/3 cup sugar
3 cups flour
4 eggs
2/3 cup water
1 Tbsp. cinnamon
3 cups apples, grated
2 tsp. baking soda
2/3 cup raisins
1/2 tsp. baking powder
2/3 cup chopped nuts
Instructions
1. Mix the ingredients together in the order given.

2. Sterilize 7 to 9 wide mouth pint jars and lids.

3. Grease them with shortening. Fill the jars half full and bake on the middle wire rack in the oven.

4. Bake for 45 minutes at 325 deg. As soon as the cake is done, remove the jars from the oven. Wipe the rim of the clean with cloth and put on the hot sterilized lids.
