  Serves: makes 6 servings
Ingredients
4 Tbsp. butter
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
Instructions
1. In medium pot, melt the butter over medium heat until it begins to foam.

2. Add the cream and cheese and stir.

3. Serve over about 1 1/2 pounds of pasta.

NOTE: If you want your cheese sauce a little thicker, beat the cream until thickened but not stiff before adding it to the butter.

Variations:
      Vary the cheese in your cheese sauce. Use only 1/2 cup grated Parmesan and add 2 ounces other cheese such as grated cheddar, Fontina, or Swiss-type cheese, or crumbled Feta, Gorgonzola, Roquefort, Bavarian Blue, or chevre into the cream mixture. Stir until melted and smooth.

      Bacon, make an Alfredo-carbonara combo. Cut bacon slices into 1/2 inch wide pieces and fry until crisp. Stir into the pasta just before serving.

      Garlic, press 1 to 3 cloves garlic into the sauce before tossing with the pasta.

      Mushrooms, saute sliced mushrooms in a little butter and lemon juice and stir into the sauce before serving.

      Blanched vegetables, briefly boil bite-size pieces of cauliflower, summer squashes, green beans, broccoli, julienned strips of carrot, peas, or use a mixture. Stir into the pasta just before serving.

      Herbs, Stir chopped fresh herbs into the sauce before tossing with the pasta.
