  Serves: makes 1 1/2 cups
Ingredients
2 Tbsp. butter
2 Tbsp. flour
1/4 tsp. salt
dash pepper
1 cup light cream or milk
1/4 tsp. dry mustard
1 cup grated cheese
Instructions
1. Slowly heat butter until golden, not browned, in medium sauce pan. Stirring constantly.

2. Remove from heat.

3. Add flour, salt and pepper. Stir until smooth.

4. Add milk, a small amount at a time, stirring after each addition.

5. Return to heat.

6. Bring to boiling over medium heat, stirring constantly.

7. Reduce heat, simmer 3 minutes.

8. Add mustard and grated cheese.

9. Stir over low heat just until cheese is melted and sauce is hot.
