Ingredients
Omelette:
4 eggs
salt
pepper
2 Tbsp. water, milk or cream
1 scant Tbsp. butter

Filling:
mushrooms
herbs
chicken livers
diced ham
bacon
asparagus
cheese
etc.
Instructions
1. Beat eggs slightly.

2. Season, to taste, with salt and pepper.

3. Add milk.

4. Heat butter in hot omelette pan (or skillet).

5. When heated, turn egg mixture into pan.

6. Quickly, with a wooden spatula, pull edges toward center.

7. Fill with desired fillings.

8. Fold and turn on hot platter.
