makes about 1 1/2 pounds
Ingredients
2 cups granulated sugar
1 cup brown sugar, firmly packed
1/2 cup light corn syrup
1/2 cup water
1/8 tsp. baking soda
pinch salt
1/4 cup butter
1 1/4 cups walnuts, peanuts, Brazil nuts, pecans, or blanched almonds, in small pieces
Instructions
1. Combine sugars, corn syrup and water in saucepan.
2. Cook, stirring until sugar is dissolved. Continue cooking, without stirring, to 300 degrees on candy thermometer, or until a little of mixture dropped in cold water becomes very brittle.
NOTE: Remove sugar crystals from sides of saucepan with a wet piece of cheesecloth wrapped around tines of fork.
3. Remove from heat. Add soda, salt and butter. Stir only enough to mix.
4. Add nut meats. Turn at once onto greased 12x8x1 inch pan. Do not scrape saucepan or candy will sugar.
5. Take hold of candy at edges after a minute or so. Lift from pan onto greased surface and pull until quite thin.
6. When cool, break up.
NOTE: When using raw nuts, add with sugars, corn syrup and water.
