Ingredients
makes approximately:
3 5 10 13 15 2 inch Biscuits
½ 1 2 3 cups Flour
3/4 1 ½ 3 3 3/4 4 ½ tsp. Baking Powder
1/4 ½ 1 1 1/4 1 ½ tsp. Salt
1 3/4 3 ½ 7 8 3/4 10 ½ Tbl. Butter or Margarine
2 Tbl. 1/4 ½ 5/8 3/4 cup Milk

for Drop Biscuits add:
2 Tbl. 1/4 ½ 5/8 3/4 cup more Milk
Instructions
1. Heat oven to 450 deg. Grease pan. 2. Sift flour, baking powder and salt. 3. Drop in butter then cut in with 2 knives until mixture looks like coarse corn meal. 4. Make a small well in center of mixture pour in milk and mix lightly with a fork. (Over stirring can make biscuits tough.) 5. Using as little flour as possible, to avoid toughness, knead lightly several times on pastry board or cloth. 6. Roll dough out to ½ to 3/4 inch thickness. 7. Cut with a 2 inch cutter and place on greased pan. 8. Brush tops of biscuits with milk, cream or melted butter to give them a delicate brown color (optional). 9. Bake for 12 to 15 minutes and serve hot.
