Ingredients
makes 9 servings

1/3 cup Butter
1 1/4 cups Flour
3/4 cup Yellow Corn Meal
1/4 cup Sugar
4 ½ tsp. Baking Powder
1 tsp. Salt
1 Egg
2/3 cup Milk
Instructions
1. Heat oven to 415 deg. Grease an 8 by 8 inch square pan.

2. Melt butter. Set aside.

3. Sift flour, corn meal, sugar and salt together. Set aside.

4. Beat egg well in small bowl.

5. Add milk and melted butter. Beat well.

6. Pour egg mixture all at once into flour mixture. Stir with fork until dry ingredients are just dampened. (Do not stir longer even if still lumpy, over stirring causes tunnels.)

7. Turn quickly into pan, spreading evenly with spatula.

8. Bake for 15 to 20 minutes, or until golden brown and cake tester comes out clean.

9. Cut into squares. Serve hot.
