  Sweet Potato Buns

Ingredients
1 lb. sweet potatoes
1pkg. Active dry yeast
1 cup warm milk (105 deg to 115 deg)
2 Tbsp. oil
2 Tbsp. brown sugar, packed
1 tsp. salt
3 to 3 1/2 cups all-purpose or bread flour
Instructions
1. Bake or boil sweet potatoes until tender. Cool. Remove potato from skins and mash (you should have 1 cup)

2. In large bowl, dissolve yeast in warm milk. Stir in mashed sweet potatoes, oil, brown sugar, salt and2 cups of the flour.

3. Turn dough out onto floured board. Knead about 8 minutes, incorporating additional flour, until dough is smooth and elastic.

4. Coat large bowl with oil. Place dough in bowl, turning to coat all sides with oil.

5. Cover. Let rise in a warm, draft-free place, until almost doubled 1 to 1 1/2 hours.

6. Punch dough down. Divide into 12 balls. Knead and tuck ends under on each one until top is smooth. Place on a large greased cookie sheet, about w inches apart. Cut 2 parallel slashes in top of each bun.

7. Cover. Let buns rise until almost doubled in size.

8. Bake at 350 deg for about 20 minutes or until golden brown.

9. Remove to racks to cool.
