makes 18 2x3" brownies
Ingredients
1/2 cup butter
4 oz. chocolate (3/4 cup cocoa and 6 Tbsp. oil)
4 eggs (at room temperature)
1/2 tsp. salt
2 cups sugar
1 tsp. vanilla
1 cup sifted flour
1 cup pecans (optional)
Instructions
1. Do not use electric mixer except for beating eggs.
2. Heat oven to 350 deg. Grease a 9x13 inch pan (a 9x9 inch pan would make brownies cakey.)
3. Melt butter and chocolate in double boiler. Cool this mixture. (IF you don''t, brownies will be heavy and dry.)
4. Beat eggs and salt until light in color and foamy in texture.
5. Add sugar and vanilla gradually and continue beating until well creamed.
6. Quickly combine chocolate and egg mixtures.
7. Before uniformly colored, fold in flour.
8. Again before uniformly colored, stir in pecans gently.
9. Bake for about 25 minutes.
10. Cool and cut.
