Ingredients
2 egg whites, room temperature
1/8 tsp. cream of tartar
1/8 tsp. salt
1/2 cup sugar
1 tsp. vanilla extract
1/4 cup finely chopped almonds or walnuts
1/3 cup mini semisweet chocolate chips
Instructions
1. Preheat oven to 350 deg. Lightly grease a large cookie sheet.

2. In a large bowl, beat egg whites until frothy, using an electric mixer on high speed. Add cream of tartar and salt and beat until egg whites form soft peaks.

3. Add sugar gradually and beat until whites are stiff and glossy. Beat in vanilla.

4. Gently fold in the nuts and chocolate chips, adding half of each of the ingredients at time.

5. Drop slightly rounded teaspoonfuls of the mixture onto the greased cookie sheet, spacing about one inch apart.

6. Place cookie sheet in oven and immediately turn off the oven. Allow the cookies to “bake” in the cooling oven at least two hours or overnight.
