Ingredients
1/4 cup powdered sugar
1 1/4 cups all-purpose flour
1/2 cup unsalted butter, softened and cut into 8 pieces

Instructions
1. Preheat oven to 300 deg.

2. In a large bowl, stir together sugar and flour.

3. Cut butter into flour mixture. Using your fingertips, work butter into flour mixture until dough holds together to form a ball.

4. Dust work surface with flour and knead dough for a few minutes, until smooth and soft.

5. Pat dough into an ungreased eight inch round cake pan. Using a fork, press 3/4 inch lines around the outside edge of dough and then prick the entire surface.

6. Bake 30 to 40 minutes or until edges are barely golden. (Do not allow shortbread to brown.)

7. Remove from oven and place pan on a wire rack cool for 10 minutes.

8. Invert the pan on the wire rack and lt the shortbread drop out. Flip the shortbread right side up and transfer it to a cutting board.

9. While still warm, cut the shortbread into wedges.

10. Cool on rack.
