  Serves: makes 6 servings
Ingredients
2 Tbsp. vegetable oil
1 onion, finely sliced
3 cloves garlic, finely chopped
1 cup uncooked rice
2 1/2 cup boiling water
2 tomatoes, peeled and finely chopped
salt and pepper to taste
Instructions
1. Heat oil in skillet over medium-high heat, add onion and garlic and mix well. Reduce to low and cook until soft.

2. Add rice, mix well to coat with oi, and cook for about 2 minutes. Add boiling water and salt and pepper to taste, increase heat to high, and bring to a boil. Reduce heat to simmer, cover and cook for 20 minutes or until rice is tender.

3. Remove form heat, add tomatoes, and mix well. cover and set aside for about 10 minutes. fluff with fork before serving.
