Ingredients
4 eggs
2 cups sugar
1 cup oil
2 cups flour
3 tsp. cinnamon
2 tsp. soda
1 tsp. salt
3 cups grated carrots
1 cup chopped nuts (optional)
Instructions
1. Beat eggs until light and lemon colored.

2. Add sugar and oil

3. Sift together flour, cinnamon, soda and salt and add to egg mixture.

4. Add carrots and nuts.

5. Bake in two 9 inch layer pans at 350 deg for 30 minutes.
