for drop biscuits add:
2 Tbsp. 1/4 1/2 5/8 3/4 Tbsp. more milk
Instructions
1. Heat oven to 450 deg. Grease a appropriate sized baking pan. 2. Sift flour, baking powder and salt. 3. Drop in shortening, then cut in with 2 knives until mixture looks like coarse corn meal. 4. Make a small well in center of mixture pour in milk and mix lightly with a fork. (Over stirring can make biscuits tough.) 5. Add enough more milk to make a light and soft, but not sticky, dough will cling to the fork in a ball. 6. Using as little flour as possible, to avoid toughness, knead lightly several times on pastry board or cloth. 7. Roll dough out to 1/2 to 3/4 inch thickness. Cut with a 2 inch cutter and place on greased pan. 8. Brush tops of biscuits with milk, cream or melted butter to give them a delicate brown color. 9. Bake for 12 to 15 minutes. Serve hot. NOTE: For meatless meals, add 1/4 to 1 1/2 cups grated cheese to shortening before blending with flour
