  Chicken and Dressing Casserole - Aunt Heather

Ingredients
1/4 cup butter
1 cup chopped celery (1 tsp. ground celery seed)
1/2 small onion, minced (1 Tbsp. dried minced)
1/2 cup chicken broth
1 1/2 cup diced, cooked chicken
1/2 can cream of chicken soup (2/3 cup)
1/2 can cream of celery soup (2/3 cup)
1/2 cup sour cream (or 2 Tbsp. cream powder and 1/2 cup milk mixed)
5 oz frozen peas (1/2 pkg.) (optional)
*1 1/2 cups (1/2 pkg.) dry prepared dressing
Instructions
1. Preheat oven to 350 deg.  Grease a 8x8 inch baking dish.

2. Melt butter in small frying pan.

3. Sauté celery and onion in butter until transparent.

4. Add chicken broth.

5. Meanwhile, cover bottom of baking dish with diced chicken.

6. Mix cream of chicken soup, cream of celery soup, sour cream and peas. Then pour this mixture over chicken.

7. Spread dry dressing over top of casserole.

8. Drizzle butter mixture over top of dressing.

9. Bake for 45 minutes to an hour.

NOTE: Turkey works well in this recipe also. Use saved drippings from turkey in place of chicken broth. You can also make homemade cream of turkey soup to use in place of cream of chicken soup, although cream of chicken soup works just fine with turkey.

*If you don''t have dry prepared dressing you can make your own by toasting 6 slices of bread and cubing them.  Add 1 Tablespoon flaked onion, 1 Tablespoon dried parsley and 1 Tablespoon poultry seasoning.
