  Chocolate Mousse

Ingredients
2 squares (1 oz. each) unsweetened chocolate
2 oz. sweet cooking chocolate
4 eggs, separated
sugar
1/2 tsp. vanilla extract
1 cup heavy cream, whipped
Instructions
1. In top of double boiler over simmering water melt unsweetened and sweet chocolate, cool.

2. In small bowl of mixer beat egg yolks with 1/2 cup sugar until light and thick beat in cooled chocolate mixture. Stir in vanilla.

3. In large bowl of mixer beat egg whites until foamy. Beat in 2 tablespoons sugar, 1 tablespoon at a time, until stiff peaks form.

4. Beat about 1/4 cup of the egg white mixture into the chocolate mixture. Fold in whipped cream. turn into remaining egg white mixture stir until no streaks of white remain.

5. Spoon mousse into serving dish. Chill at least w hours before serving.
