  Cottage Pudding with Lemon Sauce

Ingredients
Pudding:
1/4 cup butter
1 cup sugar
1 egg
1tsp. Vanilla
1 3/4 cups sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2/3 cup milk

Lemon Sauce:
!2 cup sugar
2 tsp. cornstarch
dash of salt
1 cup water
2 beaten egg yolks
2 Tbsp. butter
2 Tbsp. lemon juice
1/2 tsp. grated lemon peel
Instructions
1. Make pudding. Cream together butter and sugar.

2. Add egg and vanilla

3. Sift together flour baking powder and salt.

4. Add dry ingredients alternately with milk.

5. Beat well. Bake in a greased and floured 8x8x2 inch pan at 350 deg for 35 minutes or until done.

6. Make lemon sauce. Mix sugar, cornstarch and salt together in a saucepan.

7. Gradually stir in water.

8. Cook over low heat stirring constantly until thick and clear.

9. Stir small amount of hot mixture into egg yolks.

10. Return to hot mixture and continue stirring and cooking for 1 minute.

11. Add butter, lemon juice and lemon peel.

12 . Blend thoroughly and serve warm over warm pudding.
