  Serves: makes 6 servings
Ingredients
1/3 cup butter or margarine
1 cup sifted confectioners'' sugar
1 tsp. vanilla
pinch salt
Instructions
1. Work butter with spoon or beater until light and creamy. Then add sugar gradually, while continuing to work until light and fluffy.

2. Add vanilla, a little at a time, and salt.

3. To Serve pile in serving dish chill.

4. Sprinkle with cinnamon or nutmeg, if desired.

5. Serve with Apple Brown Betty, Steamed Puddings, Custard Bread Pudding, etc.  


VARIATIONS:

Fluffy Hard Sauce:
1. Make Hard Sauce.  Fold in 1/3 cup heave cream, whipped, then chill.
2. Or make Hard Sauce, reducing sifted confectioners'' sugar to 2/3 cup and substituting 1 teaspoon sherry (or grape juice) for vanilla.
3. Then beat 1 egg white until it peaks when beater is raised.
4. Gradually add 1/3 cup sifted confectioners'' sugar while beating. Fold into sauce.
5. Chill.

Orange Hard Sauce:
1. Make Hard Sauce using 2 teaspoons orange juice, 1/2 teaspoon orange flavoring and 1 tablespoon grated orange rind for vanilla.
2. Chill.
3. Serve with Apple Dumplings, Custard Bread Pudding, etc.
4. (To make Lemon, just change everything orange to lemon, then taste to see if it is sweet enough, because lemon just isn''t as sweet as orange.)

Sterling Sauce:
1. Make Hard Sauce, increasing butter to 1/2 cup and substituting brown sugar, firmly packed, for confectioner''s sugar.
2. Add 1/4 cup top milk (that means a light cream) very slowly, after blending butter and brown sugar.
3. Serve as in Hard Sauce.
