Ingredients
2 cups sugar
1/2 cup water
Instructions
1. In a heavy-bottomed pan, preferably a copper sugar pot, melt sugar with water over high heat. Do not stir mixture or caramel will cloud swirl pot instead.

2. Boil until sugar becomes the color of maple syrup and reaches 320 deg. On a candy thermometer.
