Ingredients
This is fantastic in tuna with a little mayo.  One of my favorite things is to cut an avocado in half and fill it with the tuna, mayo and zucchini relish mix.  It is so good.

12 cups  Zucchini, coarsely ground
2 Green Peppers, coarsely ground
2 Sweet Red Peppers, chopped
4 cups Onions, coarsely ground
1/3 cup Pickling Salt
1 tsp. Turmeric Powder
1 tsp. Curry Powder
1 tsp. Celery Seed
1 Tbl. Cornstarch
½ tsp. Pepper
3 cups Vinegar
4 ½ cups Sugar
Instructions
1. In a large pan, mix pickling salt into vegetables.  Let stand overnight.

2. Drain and rinse with cold water.

3. Mix together rest of ingredients add to vegetables in a large pan.

4. Boil 20 minutes.

5. Pour into sterilized jars and seal.
