makes 1 pie
Ingredients
1 1/2 qt. strawberries
1/2 cup water
1 cup sugar
2 1/2 Tbsp. cornstarch
1 Tbsp. butter
red food coloring, to make attractive bright color
whipped cream, sweetened and flavored
Instructions
1. Wash, drain and hull strawberries.
2. Make glaze. Crush 2 cups of strawberries.
3. Combine crushed strawberries in saucepan with water, sugar and cornstarch.
4. Bring mixture to boiling point and cook over low heat about 2 minutes or until clear.
5. Add butter and red food coloring.
6. Strain and cool slightly.
7. Fill baked and cooled pastry shell with remaining part of strawberries.
8. Spoon glaze over strawberries, making sure all strawberries are completely covered.
9. Chill.
10. Just before serving, top with whipped cream.
