  Serves: makes 6 to 8 servings
Ingredients
6 slices bacon or salt pork
1/4 cup sliced onion
6 medium potatoes, peeled and sliced (leftover potatoes may be used)
2 quarts boiling water
salt
pepper
sage or poultry seasoning (optional)
Instructions
1. Dice and fry bacon or salt pork until crisp.

2. Remove bacon or salt pork and fry onion in fat until soft but not brown

3. Add bacon or salt pork, potatoes and water.

4. Simmer until potatoes are tender and season to taste with salt, pepper, and sage.

5. Serve hot.
