Ingredients
Alexis’ favorite.

6-8 medium Potatoes, peeled
1 can Cream of Chicken Soup
½ cup Margarine or Butter
1 cup Sour Cream
1 1/4 cup Medium-Sharp Cheddar Cheese, grated
½ cup Onion, finely chopped
Crushed Potato Chips (optional)
Instructions
1. Preheat the oven to 350 deg.  Spray a 9 inch by 13 inch baking dish with Pam.

2. Cut the potatoes into slices (like silver dollars) and place in the baking dish. Set aside.

3. In a large skillet melt the margarine or butter on a low heat, add the chopped onions and cook until the onions are transparent.

4. Add the can of cream of chicken soup, stir until smooth and heated through.

5. Take off the heat and add the grated cheddar cheese (reserving a small portion set aside), until melted and mixed throughout.

6. Add the sour cream and thoroughly mix.

6. Pour the chicken soup-onion-cheese-sour cream sauce over the sliced potatoes in the baking dish.

7. Sprinkle the top with remaining grated cheddar cheese and crushed potato chips (optional).

8. Place in oven and bake for around 20 minutes or until heated throughout.
