Ingredients
4 large Baking Potatoes
Shortening
1/3-1/2 cup Milk
1/4 cup Butter or Margarine, softened
½ tsp. Salt
dash Pepper
Shredded Cheese
Instructions
1. Heat oven to 375 deg.

2. Rub potatoes with shortening prick. Bake 1 to 1 1/4 hours. Increase heat to 400 deg.

3. Cut slice from tip of each potatoes scoop out insides. Mash potatoes.

4. Add milk in small amounts, beating after each addition. Add butter or margarine, salt and pepper beat until potatoes are fluffy.

5. Fill potato shells sprinkle with shredded cheese. Bake 20 minutes or until golden brown.

NOTE: you can add chicken meat and or vegetables to the inside mixture.

*Freeze a supply, individually wrapped in foil to heat (unwrapped in 400 deg oven for about 40 minutes) for short-notice dinners.
