  Serves: makes 1 loaf
Ingredients
1 Tbsp. yeast
1 cup warm water 100 deg
3/4 cup butter
1 cup warm mashed potatoes
1/2 cup sugar
2 beaten eggs
1/2 tsp. salt
1 cup warm milk
6 cups flour
Instructions
1. Make mashed potatoes to measure 1 cup.

2. In large bowl, sprinkle yeast over warm water stir until dissolved. Stir in sugar and salt until dissolved.

3. Add mashed potato, butter, and eggs and blend well.

4. Add flour 2 cups at a time with 1/4 cup of the milk until ready to knead.

5. Knead the bread dough until smooth. About 10 minutes.

6. Place in lightly greased large bowl turn dough to bring up greased side. Cover with towel let rise until double in bulk.

7. Turn out dough onto lightly floured board. Roll out into a 16x8 inch rectangle roll up, starting at one end Press ends even pinch to seal tuck under loaf.

8. Place, seam side down, in a greased 9x5x3 inch loaf pan.

9. Let loaves rise.

10. Bake in 350 deg oven for 20 minutes.
