Ingredients
3 1/2 cups white flour
2 pkg. dry yeast
1 1/2 cups whole wheat flour
1/2 cup rye flour
1/3 cup dry milk powder
2 cups hot tap water
1 Tbsp. salt
3 Tbsp. butter
1/2 cup honey
2 Tbsp. molasses
Instructions
1. Sift 1 cup white flour, yeast, whole wheat flour, rye flour and dry milk powder together in small bowl. Set aside.

2. Place water in a large mixing bowl. Add salt, shortening, honey, and molasses to water.

3. When water mixture is warm (NOT hot), add flour mixture. Beat with an electric beater on low for 1 1/2 minutes, scraping constantly.

4. Beat 3 minutes longer at high speed.

5. Stir in enough of remaining sifted flour for a moderately stiff dough.

6. Turn onto a heavily floured surface knead 8 to 10 minutes.

7. Place in greased bowl, turning once to coat surface of dough.  Cover let rise 1 1/2 hours, or until double in bulk.

8. Punch down. Let rest 10 minutes.

9. Shape into 2 loaves. Place into greased 8 1/2x4 1/2 inch loaf pans. Let rise 45 to 60 minutes, or until double in bulk.

10. Bake at 375 deg for 50 minutes.
