Ingredients
1 cup packaged instant mashed potato or unseasoned fresh mashed potatoes
2 pkgs. (1/4 oz. size) active dry yeast
2 cups warm water
1/4 cup sugar
1 Tbsp. salt
1/2 cup butter or regular margarine, softened
7 1/2 to 7 3/4 cups unsifted all-purpose flour
2 Tbsp. butter or margarine, melted
Instructions
1. Make mashed potatoes to measure 1 cup.

2. In large bowl, sprinkle yeast over warm water stir until dissolved. Stir in sugar and salt until dissolved.

3. Add 1 cup mashed potato, 1/2 cup softened butter, and 3 1/2 cups flour. With electric mixer at medium speed, beat until smooth, about 2 minutes.

4. Gradually add 4 cups more flour, mixing with hands until dough is smooth and stiff enough to leave side of bowl mix in remaining 1/4 cup flour if needed.

5. Turn out dough onto lightly floured board. Knead until dough is smooth and elastic, about 10 minutes.

6. Place in lightly greased large bowl turn dough to bring up greased side. Cover with towel let rise until double in bulk, about 1 hour.

7. Turn out dough onto lightly floured board. Divide in half. Roll out one half into a 6x8 inch rectangle roll up, staring at one end Press ends even pinch to seal tuck under loaf.

8. Place, seam side down, in a greased 9x5x3 inch loaf pan. Brush surface lightly with some of the melted butter. Repeat with other half of dough.

9. Let loaves rise until sides come to top of pan and tops are rounded.

10. Bake in 400 deg oven for 30 to 40 minutes, or until crust is deep golden-brown.
