Ingredients
2 1/2 cups water
2 Tbsp. butter
6 1/2 cups flour
2 pkg. yeast
1 Tbsp. sugar
1 Tbsp. salt
Instructions
1. Heat water and butter to 120 deg.

2. In a mixer bowl combine 3 cups of flour, yeast, sugar, salt and water mixture. Mix on low for 3 minutes.

3. Gradually add rest of flour (enough to form a stiff dough).

4. Knead until smooth and satiny (about 4 minutes).

5. Place in a greased bowl, turning once to grease top. Cover, and let rise in a warm place for 30 minutes.

6. Punch down and divide into 2 equal parts.  Roll each part into a 15x18 inch rectangle on a slightly floured board. Roll each piece up tightly, jelly-roll style, beginning with long side. Seal edges and ends by rolling with hands. Place seam down in pan.

7. Brush with oil cover.  Refrigerate 2 to 24 hours.

8. When ready to bake, let stand 10 minutes at room temperature.

9. Brush with an egg white, slightly beaten, or water.  Slash top of loaves diagonally at 2 inch intervals with a sharp knife just before baking.

10. Bake in a preheated oven at 400 deg for 35 to 40 minutes.

11. Cool on wire rack.
