Ingredients
3 1/4 cups white flour (about)
3 cups rye flour
1/4 cup sugar
1 Tbsp. salt
1 pkg. active dry yeast
2 Tbsp. butter, softened
2 cups very warm water (120° to 130°F.)
Instructions
1. Combine 1 3/4 cups white flour and 3 cups rye flour.

2. In a large warm bowl, thoroughly mix 1 2/3 cups flour mixture, sugar, salt, and dry yeast.

3. Add softened butter.

4. Add warm water to dry ingredients and beat 2 minutes at medium speed of electric mixer.

5. Add 1 cup flour mixture. Beat at high speed for 2 minutes.

6. Stir in remaining flour mixture and enough more white flour to make a soft dough.

7. Cover let rise in a warm place, free from draft, until doubled in bulk, about 1 hour.

8. Shape dough into 2 balls. On greased baking sheets flatten to a height of 1 inch. Cover let rise until doubled, about 1 hour. Or shape into 6 even balls. On a greased baking sheet flatten to a height of 1 inch and round. Cover let rise until doubled, about 1 hour.

9. Bake at 400°F. For 20 to 30 minutes for loaves or about 15 to 25 minutes for sandwich buns. Cool on racks.
