  Serves: makes 2 loaves
Ingredients
2 pkg. yeast
1/4 warm water
3 Tbsp. brown sugar
2 1/2 cups scalded milk
3 Tbsp. shortening
2 tsp. salt
6 1/2 cups whole wheat flour
Instructions
1. Place water, yeast and brown sugar in a bowl. Let brew.

2. Meanwhile, scald milk.

3. Place in a mixing bowl and cool to 90 deg.

4. Add shortening, salt and 3 cups of flour to milk. Beat well.

5. Add softened yeast and rest of flour. Beat until flour is mixed in thoroughly. If needed for a soft dough, add more flour.

6. Mix until dough forms into an elastic ball. Cover and let rest 10 to 15 minutes.

7. Knead 10 to 15 minutes.

8. Cover and let rise until slightly more than double.

9. Punch down and let rise 30 minutes.

10. Punch down and let rise 20 minutes.

11. Divide into 2 loaves and let rest in place for about 10 minutes.

12. Shape into loaves and put into pans. Let rise, covered with a damp cloth.

13. Bake at 375 deg for 50 minutes.
