  Serves: makes 2 sm or 1 lg loaf
Ingredients
2/3 cup milk
1/4 cup lard or margarine
1 tsp. salt
1 pkg. active dry yeast
1 tsp. granulated sugar
1/4 cup water
6 cup all-purpose flour
dash pepper
1/4 cup finely grated cheddar cheese
1/4 cup grated Parmesan or Cheshire cheese
1 egg
small knob butter
Instructions
1. Heat the milk with half the lard and salt, then let cool slightly.

2. Add the milk to the water. Add the sugar. Sprinkle the yeast into the slightly warm milk mixture and let stand for approximately 10 minutes, or until frothy.

3. Sift flour and pepper together.

4. Rub in the remaining lard.

5. Add the cheese, egg, and yeast liquid. Knead together until smooth. Let stand in a covered bowl in a warm place for approximately 1 hour.

6. Turn out and knead again.

7. Form into one large or two small loaves. Put into one 9x5 inch loaf pan or two 8x4 inch loaf pans which are warmed and greased. Let rise again for approximately 20 minutes

8. Brush with a little melted butter to give a shiny crust. Bake in a preheated 425 deg oven for approximately 15 minutes, then lower the heat to 375 deg for a further 15 to 20 minutes for the small loaves, or 30 to 40 minutes for the large loaf.
