  Serves: makes 2 loaves
Ingredients
3 eggs, well beaten
1 cup oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
2 Tbsp. grated orange peel
3 cups flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 cup chopped nuts (optional)
Instructions
1. Sift flour, salt, baking soda, baking powder and cinnamon into small bowl. Set aside.

2. Beat eggs until light and fluffy.

3. Add sugar. Beat well.

4. Stir in oil, vanilla, orange peel and zucchini.

5. Add sifted flour mixture into zucchini mixture.

6. Add nuts if desired.

7. Turn into 2  well-greased 9x4 inch loaf pans.

8. Bake at 325 deg for 50 to 60 minutes or until done.

9. Remove from pans. Cool on rack.
