makes 2 loaves
Ingredients
Loaves:
1 pkg. orange cake mix
3 eggs
3/4 cup water
1/3 cup vegetable oil
1 tsp. ground cinnamon
2 cups grated zucchini
2 tsp. grated orange peel
Syrup:
1/4 cup granulated sugar
2 Tbsp. orange juice
powdered sugar, for garnish
orange slices, for garnish
Instructions
1. Preheat oven to 350 deg. Grease and flour two 8 1/2x4 1/2 x 2 1/2 inch loaf pans.
2. For loaves, combine cake mix, eggs, water oil and cinnamon in large bowl. Beat at medium speed with electric mixer for 2 minutes. Fold in zucchini and orange peel.
3. Divide evenly into pans. Bake at 350 deg for 45 to 50 minutes or until toothpick inserted in center comes out clean.
4. Cool in pans 15 minutes. Loosen loaves from pans. Invert onto cooling racks.
5. Turn right-side up on serving plates. Poke holes in tops of warm loaves with toothpick or long-tined fork.
6. For syrup, combine sugar and orange juice in small saucepan. Cook on medium heat, stirring constantly, until sugar dissolves.
7. Spoon hot syrup evenly over each loaf. Cool completely.
8. Garnish with powdered sugar and orange slices, if desired.
