  Serves: makes 1 loaf
Ingredients
1 3/4 cups sifted flour
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 cup butter
2/3 cup sugar
2 well beaten eggs
1 cup mashed ripe bananas (about 3 bananas)
3/4 cup chopped walnuts (optional)
1 cup pitted dates (optional)
Instructions
1. Heat the oven to 350 deg. Grease a loaf pan.

2. Sift flour, baking powder, baking soda and salt together into medium bowl. Set aside.

3. In large bowl work butter with the back of a spoon until fluffy and creamy.

4. Add sugar gradually, continuing to work until fluffy.

5. In small bowl, beat eggs.

6. Add eggs to sugar.

7. Slowly add bananas, walnuts and dates, alternately with flour mixture, beating smooth after each addition.

8. Turn into greased loaf pan.

9. Bake for 1 hour 10 minutes (70 minutes), or until done.
