Ingredients
2-3 Tbsp. sugar (optional)
1 cup blueberries (optional)
1/4 cup butter
*2 cups flour
3 tsp. baking powder
2 Tbsp. sugar (1/4 cup if whole wheat flour used)
1 egg
1 cup milk

*Can use 3/4 cup white flour and 1 cup whole wheat flour.
Instructions
1. Mix sugar and blueberries together. Set aside.

2. Heat oven to 425 deg. Grease muffin cups well.

3. Melt butter.

4. Meanwhile, sift flour, baking powder and sugar together. Set aside.

5. In small bowl, beat eggs until frothy.

6. Add milk and melted butter. Mix well.

7. Make a small well in center of flour mixture. Pour liquids in all at once. Stir quickly and lightly (don''t beat), until just mixed, but still lumpy.

8. Fold in blueberries (optional).

9. Fill muffin cups 2/3 full. Wipe off any spilled drops of batter.

10. Put water in any cups without batter.

11. Sprinkle sugar over blueberry muffins.

12. Bake about 15 minutes.
