Serves: makes 2 to 3 loaves

Ingredients

2 cups oil
6 eggs
4 cups grated zucchini
2 tsp. salt
4 tsp. cinnamon
1/2 tsp. baking powder
2 tsp. baking soda
4 cups sugar
6 cups flour

Instructions

1. Mix everything together, but flour.

2. Add flour. Mix thoroughly.

3. Put into loaf pans.

4. Bake at 350 deg for 60 to 90 minutes.

5. Remove from pans. Cool on rack.
