Ingredients
4 Egg Yolks
1 can (14 oz.) Sweetened Condensed milk
2/3 cup Fresh Lime Juice
1 (9 inch) Pie Crust
½ cup Whipping Cream
2 Tbl. Sugar
1 packet Knox Gelatin
1 Lime, thinly sliced
Instructions
1. Combine egg yolks and condensed milk in a heavy saucepan over medium heat.

2. Add lime juice to saucepan. Cook, stirring continually, until mixture reaches 160 deg or until mixture is thick enough to coat the back of a spoon, about 8 minutes.

3. In a small dish, melt gelatin in hot water. When melted, add to saucepan.

4. Pour filling into pie crust. Chill pie in freezer until firm.

5. Beat cream and sugar in a chilled bowl with an electric mixer set at high speed until soft peaks form, about 5 minutes. Slice pie. Garnish pie with whipped cream and lime slices.
